Ingredients

2 tsp olive oil
1 14 oz block of firm tofu, cubed
2 cups sliced mushrooms
3 mashed garlic cloves or frozen garlic cubes
4 cups fresh or frozen broccoli
2 tbs chopped rosemary leaves
Directions
Sautee garlic in olive oil. Add mushrooms; sautee three minutes. Add tofu, then broccoli and rosemary. Cover, and simmer on low. Mix occasionally. Serve over whole grain couscous. Makes 4 servings.
