Cheater No-bake Coconut Cream Pie

Introduction

This cheater pie is as flexible as can be. It is easily altered to be even lower fat and very low sugar. It's quick to make and requires no cooking or baking. Okay, it's not a real coconut cream (my favorite) but it will do in a pinch. This cheater pie is as flexible as can be. It is easily altered to be even lower fat and very low sugar. Ingredients

    Crust:
    8 whole graham crackers
    2 T. light brown sugar, packed
    1/4 c. margarine, melted

    Filling:
    3.4 oz. box Jell-o Instant French Vanilla Pudding & Pie Filling
    1 3/4 c. skim milk
    1 c. sweetened coconut

    Topping:
    Cool Whip whipped topping (I used regular for this recipe)

Directions

Crust: Mix crushed graham crackers with the sugar and then slowly add in melted margarine. Press into sides and bottom of ungreased 9" pie plate. Bake at 350 degrees for 5 minutes

Filling: Pour milk into a bowl and whisk in pudding mix for two minutes. Stir in the coconut. Fill baked pie crust. Cover with plastic wrap and refrigerate until ready to eat.

Topping: Top each slice with 1 T.* of whipped toppping.
* you can use more but I only calculated 1 T. for this recipe
