Introduction

Wow I was following this recipe and tweeked it to what I had and made it my own this recipe is so decadent I can't believe how good it taste.

Wow I was following this recipe and tweeked it to what I had and made it my own this recipe is so decadent I can't believe how good it taste.

A chocolate coconut flavor

Number of Servings: 6

Ingredients

    Meat from 2 Young Coconut
    1/2c of Coconut Butter (Melted)
    2 Avocados
    5 Tbs. of Raw Cacao Powder (I used Ultimate 100% Organic Raw Cacao Powder)
    1C of Dates soaked for several hours (water should cover dates)
    3Tbs. of Raw Agave

Directions

IN a High Speed Blender process Coconut Meat, Avocados, Coconut Butter, Dates till creamy smooth.

Some help with stirring is needed to get the machine going if it's too thick add Liquid from Soaked Dates and Agave If you run out of the liquid from the soaked dates add filtered water then add 5 Tbs of Raw Cacao Powder and blend again.

You shouldn't need to stir the pudding around if you do add a more filtered water until you get the consistency and machine is mixing on it's on.

Makes about 6-8 servings.

You can let it sit in the fridge for 1-2 hours to thicken and enjoy I left mine over night and It was very decadent.

You can use this pudding to make Raw Pies.

I didn't post the crust recipe as I still need to work with that recipe but whatever nut combination you use for the tart crusts will work.

I just broke it down and sprinkled on top of the pudding I wanted to add raspberries but I didn't have any on hand.

You can taste the coconut pulp in it I would even fold in shredded coconut in the pudding for texture if you'd like.

It took me longer then 45 minutes as I was making it work but average time would have been 45 minutes or less.

  • 25 grams of fat AND 50 grams of carbs per serving? Yeah. Decadent would be the answer. If you didn't have diabetes before, you will after a serving or two of this....And of course, there needs to be a carb laden crust added to it. Perhaps just the coconut and the chocolate, blend, chill, eat? - 1/14/11

    IF you understand anything that has to do with raw you wouldn't make that comment. That grams of carbs and fat comes from the avocado, and/or coconut meat and Raw Agave.

    This won't affect your diabetes or will give you diabetes.
    This doesn't need(its' opt) a crust that would add more carbs/fat
