All Vegetable Chick Pea Stew

Introduction

A great vegetarian recipe! A great vegetarian recipe!
Number of Servings: 4

Ingredients

    3 1/2 cups of hand crushed canned tomatoes
    Pinch of Brown Sugar
    2 Cups Reduced Salt Chick Peas
    Handful of fresh parsley, chopped
    2 tsp garlic or 1 head
    1 pinch pepper and salt
    2 tbsp chopped onion. Can use scallions if preffered.
    1 sweet bell pepper
    1 small zucchini
    1 tsp paprika
    I also added in some basil

Directions

In a sauce pan, spray with a couple of sprays of oil over low heat.
Add in onion, zucchini and peppers and coat with paprika. Add in tomatoes, brown sugar, salt, pepper and basil and garlic.
Let simmer for 20 minutes.
Add garlic, chick peas and basil.
Ladle in to bowls and serve.
Can be frozen! I have pre made this and froze it in sealed tight containers and thawed in microwave.
A great alternative to tv dinners :)
