Breakfast Veggie Quiche

Introduction

Number of Servings: 6

Ingredients

    6 large eggs, beaten
    1 cup part skim ricotta cheese
    2 cups chopped veggies (asparagus, broccoli, spinach, zucchini, etc)
    1/2 cup grated cheese (parmesian, cheddar, smoked gouda, feta, etc)
    salt, pepper other seasonings, to taste.

Directions

Heat oven to 350
Put eggs, ricotta, seasonings in mixing bowl.
Use mixer or hand blender to mix until smooth
Grease pie pan w/cooking oil spray
Sprinkle half of the grated cheese on bottom of pie pan
Add chopped veggies, distributing evenly.
Pour in egg ricotta cheese mixture
Sprinkle other half of grated cheese on top and bake for 35 -40 min until golden brown and no liquid remains when tested w/a knife in center.
