Healthy Hot Greek Pasta

Introduction

This is a quick and easy light meal based on a Mediterranean diet. This is a quick and easy light meal based on a Mediterranean diet.
Number of Servings: 2

Ingredients

    2 tsp Olive oil
    1/4 cup chopped onions
    2 cloves garlic, minced
    1/4 cup Balsamic vinegar
    1 cup canned, diced tomatoes, drained
    1 tsp dried parsley
    1 tsp dried oregano
    3 oz (1 1/4 cup uncooked) Healthy Harvest Rotini
    50 grams (10) Kalamata olives, pitted and sliced
    40 grams Lite feta cheese

Directions

Start pasta cooking following the directions on the package.
In a wide skillet, heat the olive oil. Saute onion for a couple minutes then add garlic and saute until softened. Add the balsamic vinegar, stirring until it begins to boil. Add the tomatoes and dried oregano and heat until bubbling. Add the parsley and the drained pasta and heat through. Divide between two serving plates. Top with sliced olives and crumbled feta cheese.
