Tips

I marinade the chicken in the morning, grill it at night, and serve it with steamed or frozen vegetables and brown rice that I cook on nights when I have more time.

Swap the chicken for tofu or lean beef.
If you don't have a grill, roast the chicken at 375 degrees Fahrenheit for about 20-25 minutes, depending on the thickness of the chicken.


Directions

Place the chicken in a glass dish and pour 1/4 cup of the marinade over it. Cover and refrigerate up to 24 hours.
Remove the meat from the marinade, and discard any leftover marinade. Grill until internal temperature reaches 165 degrees, about 15 minutes, flipping halfway through.
Serve with a half cup of brown rice and one cup of vegetables, plus more sauce if desired.
Makes four servings, 3 ounces of cooked chicken per person.

Sooo simple yet so good. This is one of those recipes for a quick night meal. If you don't have a grill try using the oven. Roast the chicken at 375 for about 20-25 mintues, depending on the thickness of the chicken.

    The title is misleading. It should include something about leftovers or pre-made marinade or 15 minute *cooking time*. The recipe actually takes hours to prepare. - 4/11/11

    Made this for one, so I scaled down the chicken portion, but made the marinade per the recipe and have put it in the freezer for future use. Just pop out a 1/8 cup portion, thaw and baste away. Chicken is a 24-hour marinate. I have also used this marinade on salmon, as a grilling sauce. Both good! - 4/3/12

    ICK, I cannot believe all of the reviews saying how great this recipe is. It was just OK, but honestly, if you marinate chicken in italian dressing, it tastes MUCH better. I gave it one star because it was edible, but not enjoyable. - 1/24/13

  • Made the 4 servings. Roasted the chicken in the oven for 22 minutes. Came out beautifully. I do recommend putting a little of the reserved marinade (not the stuff the chicken was in) on the side for dipping. I heated this up on the stove top. Everyone thought this was delicious!! - 12/4/13

  • I marinated this for 8 hours and it was wonderful. We grilled it on the charcoal grill and we all just loved it. I actually used chicken thighs rather than the chicken breast because that it what my husband likes. You could use a combination of meat. I could see the marinade good on pork and sal - 4/28/13

    Misleading, as you have to do it the night before, when you only have 30 min to meal time. The sauce is very good, but a little too vinegary (if that is even a word!). I would lessen the rice wine vinegar a bit next time. But still very enjoyable! - 2/28/13

  • We enjoyed this and are adding to rotation. This time it was a bit too lemony but that's easy to adjust. Next time will add more heat. I've bagged and froze some chicken in the marinade for a future meal. I hope it comes out good - I'm sure it will be great! - 1/28/13
