Ingredients

    900g/2lbs Mushrooms sliced thin
    4 TBS Olive Oil
    2 large onions chopped
    2 cloves garlic
    4 heaping TBS flour
    8 cups/4pts of Chicken Stock (I used Pacific Rim Mushroom Stock)
    2 Bay Leaves (WHOLE)
    Thyme - one sprig just leaves, chopped
    Pink Salt and Black Pepper to Taste

Directions

1. Wipe dirt from mushrooms and slice thin
2. Chop onions
3. Heat oil in saucepan
4. Add onions and garlic, cook until softened
5. Turn up heat, add mushrooms and cook for about 5 min
6. Pour in stock, bring to boil, add bay leaves, parsley, and thyme
7. Simmer 15 min
8. Remove bay leaves
9. Allow to cool slightly if prefer
10. Pour carefully into food blender in stages or use hand held blender to blitz until smooth
11. Season to taste
12. Serve
