Spiced Carrot & Chickpea fritters

Introduction

These healthy carrot and chickpea patties are whizzed together in a food processor with herbs and spices to produce a fresh-tasting variation on the vegeburger! These healthy carrot and chickpea patties are whizzed together in a food processor with herbs and spices to produce a fresh-tasting variation on the vegeburger!
Number of Servings: 4

Ingredients

    350g carrots
    1 clove garlic
    large bunch of fresh coriander
    400g canned chickpeas
    1.5 tsp ground cumin
    1.5 tsp ground coriander
    1 lrg egg
    2 tbsp plain flour
    Oil for frying

Directions

1. Peel and grate carrots coarsely, set them aside
2. peel then roughly chop garlic, then rinse and chop enough coriander to give 6 tbsp.
3. Drain & rinse chickpeas and put them in the food processor with the garlic, coriander and both ground spices. Process to a rough paste then add the carrot, egg and flour and process until evenly mixed but slightly rugged.
4. Heat oil in frying pan and divide into 8 fritters. fry in batches for 2-3 mins on each side until golden then drain on kitchen paper.

Serve in buns or on oval pittas, with salad.

Serving 2 fitters.
