Baked Potato Soup

Introduction

This potato soup has an earthy flavor to it. It could be modified for crockpot, but I have not tried it. I like to cook the onion, garlic, and spices to make this more robust. Number of Servings: 9

Ingredients

    5 medium potatoes, diced (I leave the peel on)
    2 cups chicken broth
    2 cups water
    6 slices turkey bacon
    1 tbsp olive oil
    1 medium onions, chopped
    1 tsp minced garlic
    1 tsp thyme
    1 tsp rosemary
    2 tsp basil
    2 cups of Milk, nonfat
    1/4 cup Flour Thyme, ground, 1 tsp (remove)
    1 cup cheddar cheese


Directions

Boil potatoes in chicken broth and water until the liquid is reduced by half. Cook turkey bacon in microwave per package instructions and crumble into small pieces. In a small pan heat olive oil, add onion, garlic, thyme, rosemary, and basil until the onion is done. In a jar, shake the flour and milk until blended together. Add all the ingredients to the potatoes. If it is too thick, add some water, if it is too thin, add more flour/milk. Add cheese and serve.

Makes 9 - 1 cup servings
