Super Tasty Cabbage Sausage & Beans

Number of Servings: 4

Ingredients

    1 tablespoon Extra Virgin Olive Oil
    1 lb. pkg. Kielbasa Sausage (I used Turkey version)
    1 head of fresh, tender cabbage; chopped (toss heart)
    1 med-large sweet onion. chopped
    1 can dark red Kidney Beans; drained & rinsed
    1 can (@ 14 oz) Diced tomatoes
    1/8 tsp (or more if preferred) crushed red pepper flakes
    salt and pepper to taste

Directions

Cut the sausage into 1/2" thick slices & cut those in half. Brown in a skillet with olive oil, then add the onions and cook until tender. Add the canned tomatoes (including the liquid), the kidney beans, the red pepper flakes and mix well. Finally stir in the cabbage and cook until it wilts down, and serve.

A very hearty healthy meal that makes a perfect fast & easy winter meal.

Serves 4-6, depending on whether or not you include additional sides or bread. (We liked it all by itself!).
