3 grain sweet pongal

Number of Servings: 6

Ingredients

    * Barley, pearled, uncooked, 0.25 cup
    * White Rice, medium grain, uncooked, 0.25 cup
    * Spelt, Grain, uncooked .25 cup,
    * moong dal, .25 cup
    * 2 cups water
    * Milk, nonfat, 1 cup
    * Raw sugar, 12 tsp
    * Butter - Ghee, 3 tsp
    * Cashew Nuts, raw, 2 tbsp
    * Raisins, .33 cup (not packed)
    * Cardamom, ground, 1 tsp

Directions

Toast moong dal in a dry skillet till golden. Mix with other grains and water and pressure cook till done.

Fry cashew nuts in ghee and set aside.

Heat milk, dissolve sugar in milk. Add raisins and cardamom powder and let simmer for a few mins. Stir in cooked grains/dal and keep stirring till it thickens. Add fried cashews/ghee and remove from heat.
