Easy Taco Salad

Introduction

Quick and easy Taco Salad. I used regular cheddar, but a lower fat cheese would be healthier. Quick and easy Taco Salad. I used regular cheddar, but a lower fat cheese would be healthier.
Number of Servings: 4

Ingredients

    1 lb extra lean ground beef
    1 pkg Taco Bell Seasoning Mix
    4 cups shredded Romaine Lettuce (or your favorite)
    1 large tomato - diced
    1 medium onion - diced
    1 cup salsa (I use Pace Chunky Medium)
    1/2 cup light sour cream
    1 cup shredded cheddar cheese

Directions

Brown the meat in a non-stick pan (that way you don't need oil for cooking). Add seasoning, and 3/4 cup of water. Simmer until sauce thickens.
Into 4 deep plates (or bowls) evenly spread the lettuce. Sprinkle with tomatoes and onions. Add the beef, and top with the salsa, sour cream and cheese.
