Chicken with Greek Potatoes

Ingredients

    3 oz chicken breast
    1 small potato
    2 cups of broccoli spears
    2 tsp of olive oil
    salt and pepper to taste
    2 tbsp crumbled feta cheese
    1 tbsp red wine vinegar

Directions

Preheat oven to 400 degrees. Coat a baking sheet with cooking spray. Bake 30 minutes or until done. Chop 1 small potato into 1 inch cubes; toss with 2 cups of broccoli spears, 2 teaspoons olive oil, and salt and pepper to taste. Roast 30 minutes. Mix vegetables with 2 tbsp crumbled feta cheese and 1 tbsp red wine vinegar; serve with the chicken.
