Golden Sesame Tofu

Number of Servings: 4

Ingredients

    .5 cups uncooked rice
    1 lb extra firm tofu, drained and cubed
    2 tbs canola oil
    6 cloves garlic, peeled and diced
    2" fresh ginger root, peeled and diced
    1 c. unsweetened pineapple juice
    3 tbs. sugar (or other preferred sweetner like honey)
    6 tbs. apple cider vinegar
    2 tbs. tamari
    1.5 tbs. cornstarch
    .5 tsp crushed red pepper flakes
    1 head of broccoli, cut into bite sized pieces
    1 tbs sesame seeds

Directions

Yields four generous dinner servings

Cook rice and set aside or use leftover rice

Combine liquids (except oil), sugar, and half of garlic in sauce pan or heat proof bowl over medium-low heat

Whisk in cornstarch (there will be lumps but they will break up as it cooks), stir occasionally and reduce heat to low once thickened

While cooking sauce heat oil in a wok or heavy skillet over medium high heat

Add tofu and cook until crispy then add remaining ginger and remaining garlic and allow to cook a few minutes

Add broccoli and cook until bright and just tender

Move tofu mixture to the sides and add the sesame seeds and toast for a few minutes then stir to combine

Serve tofu with sauce over rice
