Chicken Broccoli Bean Soup

Introduction

This has a lot of ingredients, but it's very easy to make and worth the time! If it comes out thick, either serve it over rice or add a little more chicken broth or water. Number of Servings: 8

Ingredients

    4 cups fat free chicken broth
    3/4 lb chicken breast
    1 T olive oil
    2-3 cloves garlic, chopped
    3/4 c diced onion
    3/4 c diced celery
    3/4 c diced carrots
    1 1/4 t oregano
    1 1/4 t rosemary
    1 1/4 t basil
    2 t Worcestershire sauce
    2 t tabasco sauce
    10 oz packaged frozen broccoli florets
    3/4 c barbeque sauce
    3/4 t liquid smoke
    1 - 14 oz can black beans, rinsed and drained
    1/4 c heavy cream

    Roux
    2 T unsalted butter
    2 T flour

Directions

1. Poach chicken in broth. Cool and chop chicken. Keep broth.
2. Heat oil in large stock pot. Add veggies (except broccoli) and herbs. Carmelize; about 5 minutes.
3. Add remaining ingredients, including chicken and broth, but not cream or roux ingredients. Simmer for 45 minutes.
4. Add roux; simmer for additional 15 minutes.
5. Add cream and serve.

Roux:
Melt butter in small skillet. Sprinkle flour and stir constantly until light brown, about 3 minutes.

Makes 8 - 1 cup servings. Freezes well.
