Peanut Butter Tofu Medley

Ingredients

    2 c. cooked brown rice
    .5 c. uncooked lentils
    2 tbs. sesame oil
    1 medium onion, peeled and diced
    6 oz. extra firm tofu, drained and cubed
    1 tsp salt
    2 tsp ground black pepper
    2" fresh ginger root, peeled and minced
    4 cloves garlic, peeled and minced
    3 carrots, peeled and chopped
    5 large mushrooms, washed and sliced
    1 tbs tamari
    .25c to .5c stock
    .25 c ground peanuts or chunky peanut butter
    .5 tsp cayenne pepper
    2 tsp ground coriander
    2 tsp ground cumin

Directions

Yields six dinner sized portions

Cook lentils

While lentils are cooking, heat oil over medium high heat in a wok or heavy skillet

Add onions and tofu and salt and pepper and stir and allow to cook for a few minutes

Add ginger and cook a few minutes then add garlic and carrots

Use some stock to deglaze the pan as needed then add mushrooms and cook for about five minutes

Move ingredients to the side of the pan and add a portion of stock, tamari, and peanut butter and combine to make a sauce, adding stock as needed to thin the peanut butter

Add the spices and stir all ingredients together then add rice and serve
