Ingredients

    1 potatoe
    1 sweet potato
    1 small onion
    1/4 cup green pepper
    1/4 cup red pepper
    1 Tab olive oil
    1 tab light margarine

Directions

Scrub and shred or chop potatoes,You can leave skins on or peel, your choice. I like leaving half the peel. Place olive oil & margarine in skillet. Add potatoes, chopped onions, green & red peppers, and salt & pepper. Cook and stir until coated withmargarine. Cook and stir occassionally for about 20 minutes until beginning to brown.
divide among 4 platters, serves 4
