Hungry Girl's Fab-Five Banana Pancakes

Introduction

From the Hungry Girl 200 under 200 cookbook
There are some slight tweaks- I don't add the Splenda (1 packet if you want to) or salt (dash) and I use vanilla almond milk instead of light vanilla soy as recommended in the original recipe- but that's a personal product preference. Also, I don't get 5 pancakes, I make 4- but that's just because of the size I make.

Ingredients

    1/4 c Whole Wheat Flour
    1/4 c Banana- about half a medium banana
    3 Tbsp liquid egg whites, fat free
    1 Tbsp Vanilla Almond Milk
    1/4 tsp Baking Powder
    1/4 tsp Vanilla Extract
    1/4 tsp Cinnamon, ground

Directions

In a small bowl, combine all dry ingredients until mixed well.
In a separate bowl, combine mashed banana with all wet ingredients until thoroughly mixed.
Combine wet and dry ingredients and stir thoroughly.
Bring a large pan or skillet sprayed with nonstick spray to medium heat. Pour batter into pan to form 5 mini pancakes. Once pancakes begin to look solid, after about 1 minute, gently flip.
Cook for an additional minute, or until both sides are lightly browned and insides are cooked through. Then plate them up and enjoy.
