Number of Servings: 12

Ingredients

    1-1/4 c Whole Wheat Flour,
    1/2 c Quaker Natural Wheat Bran,
    1/3 c Wheat Germ,
    2 tbsp Flax Seed
    1 tsp Baking Powder,
    1 tsp Baking Soda,
    1/4 tsp Salt,

    1 large egg
    1/3 c Granulated Brown Sugar Twin,
    1/3 c Mott's Unsweetened Apple Sauce,
    1 c mashed Banana,
    150 grams Greek Yogurt, plain 0% fat (yes, weigh it)
    2 tbsp Molasses,
    50 grams chopped Walnuts,
    1 cup frozen whole raspberries

Directions

Combine the first 7ingredients in a bowl. Stir well to blend. Mix the remaining ingredients together in a separate large bowl. Add the dry ingredients, stirring just until blended.

Spoon into muffin cups.

Bake at 375 degrees F for 20 to 25 minutes.

  • Made these Muffins last night and they were really good! I actually realised after I scooped out all the muffins that I forgot the egg, but they turned out really good just the same! I also threw some pumpkin seeds on top (instead of dates), very nice touch! - 2/1/10
