Baked French Toast with Cashews and Raisins

Ingredients

1 tbs canola oil
3.75 oz crusty bread or any stale bread
1 tsp cinnamon
1 tsb sugar
2 oz cashews
1.5 oz raisins
1 egg
.75 c soy milk
.25 c maple syrup for serving
Directions
Yields 4 small servings
Preheat oven to 400F
Oil a baking pan with the oil
Slice bread into .5-.75oz slices if not already sliced and arrange on the bottom of the pan
Sprinkle cinnamon and sugar over top of the bread
Sprinkle raisins and cashews over the bread
Beat egg and milk then pour over the bread
Bake for thirty minutes or until egg is fully cooked
Serve warm with maple syrup or other favorite topping
