Pina Colada Quinoa

Ingredients

1 c water
1 c pineapple juice
1 c quinoa
.25 tsp coriander
1 tbs canola oil
1 medium onion, peeled and diced
2 c chopped kale (about 6-7 leaves)
4 cloves garlic, peeled and diced
2" fresh ginger root, peeled and minced
1 red pepper, diced
8-9 oz coconut milk
Directions
Yields six servings
Rinse and drain quinoa then heat over medium high heat in a saucepan until smells nutty or tails began to form
Add juice and water and bring to a boil, once it boils stir and cover and reduce heat to a simmer and add coriander and cook until done about twenty minutes or so then remove from heat and set aside
Meanwhile, heat oil in a skillet over medium high heat and cook onions until browned
Add kale and cook until bright green
Add ginger and garlic and cook for another few minutes
Add pepper and cook an additional minute or so
Add coconut milk and stir to combine
Add quinoa and serve
