easy homemade chocolate truffles

Ingredients

    7 oz good quality semi-sweet chocolate, finely chopped
    1 oz good quality unsweetened cocoa power
    .667 c heavy cream

Directions

Yields 24 bite sized truffles

Combine cocoa and chocolate pieces in a metal or glass bowl

Slowly bring cream to a boil in a heavy sauce pan

Pour hot cream over chocolate then stir in concentric circles from the middle; do no whip or beat as it will incorporate air. Continue stirring until the ganache is smooth

Allow to cool for about an hour or until can spoon onto a cookie sheet

Spoon ganache onto a cookie sheet (I cover mine with a silpat) into little bite sized lumps

Cool for 15 minutes in the freezer then serve.

Store in an airtight container in the refrigerator
