Vegetable Fritatta (no oven required)

Introduction

I guess its called a fritatta...but it is a great way to get your veggies in for breakfast. I guess its called a fritatta...but it is a great way to get your veggies in for breakfast.
Number of Servings: 4

Ingredients

    8 asparagus sprears chopped
    1/2 cup canned mushrooms
    1/4 cup diced onion
    1/2 yellow bell pepper diced
    1 cup spinach chopped
    3 large eggs
    4 egg white
    1/2 cup skim milk
    1/2 cup shredded italian cheese blend

Directions

Spray pan with cooking spray add asparagus and saute until tender crisp then add onion, pepper and mushrooms and saute until soft.

While veggies are cooking combine eggs and milk.

Add spinach and egg mixture to pan and top with cheese...I also added basil and thyme to my mixture.

Cover and cook over medium heat for 7-10 minutes. Once set remove from heat and cut into four peices.

I cut it in half when I made it but with all the veggies it was very filling so 4 servings instead of two is completely doable.
