Bil's Cilantro Pesto PastaSubmitted by: CAZLINR
6 oz. Mueller's bowtie pasa
1/2 bunch fresh cilantro
2.5 cloves garlic minced
1.5 t white wine vinegar
1 T-2 grated parmasen cheese
1/4 t cayenne pepper
.25 c and 2 T walnuts or pecans
salt to taste
.25 c olive oil (?) or half chicken broth or ricotta cheese.
2. In blender, blend cilantro, garlic, vinegar, Parmesan cheese, cayenne pepper, nuts and salt.
3. Add half of olive oil or olive oil mixture and blend. Add more until it reaches correct consistency.
4. Pour pesto in a small saucepan and warm over low heat, stirring constantly until pesto begins to simmer. Pour over cooked pasta and toss.
