Maple-Dijon Chicken

Number of Servings: 4

Ingredients

    1 lb chicken breast or tenders (mine were frozen)
    1 onion, chopped
    3 cloves garlic, chopped
    1 tsp dried thyme
    2 tbsp Dijon mustard
    3 tbsp maple syrup
    2 sweet potatoes, peeled & chopped
    1 cup low sodium chicken broth
    2 bay leaves

Directions

Place chicken into bottom of a 6-quart crock pot. Throw onions, garlic, thyme, mustard and maple syrup on top and toss to combine. Top the chicken with the sweet potatoes and pour the chicken broth over everything. Float the bay leaves.

Cover and cook on low for 5-7 hours, or on high for 3-5 hours. Dish is done when chicken is cooked through and potatoes are tender.

Makes 4 servings.
