1 lb chicken breast or tenders (mine were frozen)
1 onion, chopped
3 cloves garlic, chopped
1 tsp dried thyme
2 tbsp Dijon mustard
3 tbsp maple syrup
2 sweet potatoes, peeled & chopped
1 cup low sodium chicken broth
2 bay leaves
Cover and cook on low for 5-7 hours, or on high for 3-5 hours. Dish is done when chicken is cooked through and potatoes are tender.
Makes 4 servings.
