1 lb ground turkey breast
1 medium onion, chopped
1 packet taco seasoning
1 can condensed tomato soup
1 cup canned diced tomatos (with juice)
8 medium whole-wheat tortillas, cut into 1 inch pieces
1 cup shredded low-fat cheddar cheese
Pour mixture into 13x9 baking dish that has been sprayed with non-stick cooking spray. Bake until hot (about 20 minutes) then top with remaining cheese and bake until melted.
Serve over a bed of lettuce and top with sour cream, olives and diced tomatos (all optional).

This was pretty good. Only used 1/3 or so pack of taco seasoning because of sodium. I wouldn't make it with the tortillas again, they ended up soggy. I might put tortilla chips on the top or in a layer on the bottom. Also makes a good dip. My husband ate this scooping it up with tortilla chips - 11/12/10
