Introduction

This tasty high fiber bean salad is a huge hit at our house. In only takes a few minutes to make and one bowl lasts through several meals. Serving size = 1 cup. This tasty high fiber bean salad is a huge hit at our house. In only takes a few minutes to make and one bowl lasts through several meals. Serving size = 1 cup.
Number of Servings: 21

Ingredients

    1/3 cup olive oil
    1/3 cup granulated sugar
    1/3 cup apple cider vinegar

    2 cans kidney beans
    2 cans garbanzo beans
    2 cans black beans
    2 cans green beans
    2 cups diced celery
    2 cups diced carrots
    1 chopped sweet onion

Directions

Make dressing my mixing oil, sugar & vinegar together in a salad cruet. Shake well & set aside

Mix other ingredients in a large bowl, Toss with dressing. Best served chilled.

Note: this salad can be made with any combination of canned beans/vegetables. More beans raises the calorie count, more veggies lowers it.
