Ingredients

    2.5 pounds diced potatoes
    2 tbsp. vegetable oil
    1/2 cup diced onion

Directions

Heat skillet on medium low. Add oil. Add diced potatoes and onions. Salt and pepper to taste. Cook until potatoes are tender and golden brown.
Makes 10 one-half cup servings
