This tantalizing slow cooking recipe is perfect for families of 3 & up! Throw everything in the pot mid-morning and come home to a wonderful, melt in your mouth, cheesy, broccoli and rice DINNER EVERYONE WILL ENJOY!!!! This tantalizing slow cooking recipe is perfect for families of 3 & up! Throw everything in the pot mid-morning and come home to a wonderful, melt in your mouth, cheesy, broccoli and rice DINNER EVERYONE WILL ENJOY!!!!
Number of Servings: 8

Ingredients

    3 cups brown rice, uncooked
    6 cups water
    2 cans 98% Fat Free Broccoli Cheese Soup
    4-6 boneless, skinless chicken breasts, frozen
    One 16oz package broccoli, frozen
    Black pepper and/or your favorite "unsalted" fat-free seasonings
    1 cup shredded Cheddar Cheese

Directions

Stir uncooked rice, water, broccoli, & one can of soup together in Crockpot. Place frozen chicken breasts on top. Pour second can of soup over chicken breasts and sprinkle with seasonings. Cover and cook in Crockpot on low for 6 hours.

Serve with Chicken breasts over the rice and broccoli. Sprinkle nonfat Cheddar Cheese on top....mmm delicious

    This was an easy recipe, however it had drawbacks. There was a LOT of rice, some areas soupy, and the top side of the chicken dried out. However I did enjoy the flavor. - 10/20/09

    Modified the cooking time----be sure to cover all the chicken :)....enjoy
