Introduction

This is a french peasant soup recipe that was passed down by my family. Big on flavour, short on fat! Serve with a baggette, or my family occassionally puts vinegar on it before serving! Serve with a baggette, or my family occassionally puts vinegar on it before serving! Very delicious!
Number of Servings: 6

Ingredients

    3 small ham hocks
    1 medium onion
    1 medium rutebaga
    1 head of cabbage
    3 carrots
    3 celery
    salt and pepper
    water

Directions

place ham hocks in a hot dry pot. Sear them gently, and add water to 3/4 pot full. Cut into smaller chunks everything but cabbage, salt and pepper. Add to pot and simmer for 2 hours. Remove ham hocks and pick off meat, shred and return to pot, but discard bone and fat. Add Cabbage that has been cut into smaller chunks as well, and simmer for one more hour. Season with salt and pepper to taste, and serve. Serving size is about 1 1/2 to 2 cups!
