Chicken Apple Sausage, Onion and Fennel Pizza

Introduction

Number of Servings: 4

Ingredients

    1 Link Alfresco Chicken Apple Sausage, diced
    1 tsp light olive oil
    1.5 cups sliced sweet onion
    1 cup thinly sliced fennel bulb
    1/4 tsp salt
    2 tbsp healthy marinara sauce
    Whole wheat pizza crust (not baked)
    1 oz shredded Fontina cheese
    1.5 oz shredded buffalo mozzarella
    1 oz shredded goat cheese

Directions

Preheat oven to 450. If using a pizza stone, place in oven before preheating.

Heat a large nonstick skillet over med/high heat. Add sausage (diced very small); saute 4 minutes or until browned, stirring. Remove from pan.
Add oil to pan. Add onion, fennel and sal; cover and cook 10 minutes until tender and lightly browned, stirring as needed.
Place pizza crust on baking sheet (or stone).
Spread marinara sauce over pizza.
Top with onion mixture.
Sprinkle with mixed cheeses.
Top with sausage.
Bake for 12 minutes or until cheese melts.
Cut pizza into 8 wedges. Yield: 4 servings (2 wedges)
