Lighter Jiffy Spoon Bread Casserole

Introduction

This is the classic jiffy corn casserole. Used 1/2 the butter called for, light sour cream, salt free corn. Still a work in progress. This is the classic jiffy corn casserole. Used 1/2 the butter called for, light sour cream, salt free corn. Still a work in progress.

Ingredients

    2 package Jiffy Corn Muffin Mix
    1/2 cup butter or margarine, melted
    1 15 oz can corn, no salt added, drained
    1 15 oz can creamed corn
    2 cup light sour cream
    4 eggs

Directions

Preheat oven to 375*, spray 3 quart casserole dish with non-stick spray.

Pour melted butter/margarine and corns into casserole dish. Blend in sour cream. Beat eggs and stir into casserole along with muffin mix. Blend thoroughly. Bake 35-45 minutes or until center is firm.
