Introduction

low carb mashed "potatoes" low carb mashed "potatoes"
Number of Servings: 4

Ingredients

    1 med head cauliflower
    4 T weight watchers whipped cream cheese
    2 T ff half and half
    1 oz shredded parmesan cheese
    2 pieces of sun dried tomatoes finely chopped

Directions

boil cauliflower until tender and drain
mash with cream cheese, half and half (blend in blender for desired consistency)
add cheese and tomatoes

season w/ pepper, salt, basil, and parsley

Makes approx 4 servings (1/2 cup)

  • Skipped the tomatoes, but added Mrs. Dash Table Blend seasoning and used 1 oz. regular cream cheese instead of WW. Blended it in the magic bullet and it came out perfect. Sooooo tasty!! - 2/15/11
