1 med head cauliflower
4 T weight watchers whipped cream cheese
2 T ff half and half
1 oz shredded parmesan cheese
2 pieces of sun dried tomatoes finely chopped
mash with cream cheese, half and half (blend in blender for desired consistency)
add cheese and tomatoes
season w/ pepper, salt, basil, and parsley
Makes approx 4 servings (1/2 cup)
