Ingredients

    1 & 1/2 lb skinless, bonelss chicken breast, rinsed & patted dry
    1 can diced tomatoes with green pepper & onion
    1 can diced tomatoes with mild green chilis
    1/ C low-fat ricotta cheese
    3/4 tsp salt
    1 green bell pepper, chopped coarsely
    12 oz fresh mushrooms, sliced thick.
    freshly ground black pepper
    6 cloves garlic, minced
    1/2 C shredded low-fat mozzarella cheese
    3/4 C fresh basil, chopped

Directions

Preheat oven to 375 degrees. Spray a non-stick baking pan with olive oil spray. Cut breasts in half & arrange breasts on pan. Lightly spray mushrooms & bell peppers with olive oil spray, saute until browned; top chicken. Saute garlic lightly & spread over chicken. Add tomatoes & dollops of ricotta cheese. Season with salt & pepper; top with mozzarella & basil. Bake for 35 minutes, or until the chicken is cooked through, the ricotta is bubbling, & the mozzarella turns golden brown. Serves 12

  • In the breakdown of this recipe, it says 4 oz. chicken per serve, however you are only using 24 oz chicken for 12 servings. Somehow that doesn't add up to for me. Looks like only 2 oz chicken per serving and the rest is sauce. I would appreciate someone responding to my private email address . - 10/17/10
