Susie's Banana Bread

Introduction

Makes 2 loaves.

This is a (slight) adaptation of a recipe that a friend--the above-mentioned Susie--made years ago, and I loved. I think maybe it's the addition of cloves that really makes it outstanding.

She thankfully passed along the recipe. It's not "light" by any means, but a slice can be a nice snack when you plan accordingly, right?

I also love to set up a "Banana Bread Station" to make this recipe whenever we happen to have children visiting. Kids are excellent banana smashers.

Ingredients

    Ingredients:

    * Butter, unsalted, 2/3 cup, melted
    * 4 Eggs (at room temperature), lightly beaten
    * Granulated Sugar, 2 cup
    * Banana, 2 cups, very ripe & mashed. (Or 1 c. banana & 1 c. grated carrot)
    * Water, tap, 2/3 cup
    * white, all-purpose flour 2 cup
    * *Whole Wheat Flour, 1.5 cup
    * Baking Powder, .5 tsp
    * Baking Soda, 2 tsp
    * Salt, 1.5 tsp
    * Cinnamon, ground, 2 tsp
    * Cloves, ground, 1 tsp

Directions

Preheat oven to 350F.

Combine butter, eggs, sugar, bananas and water. In a separate bowl, combine dry ingredients. Mix wet ingredients into dry ingredients until just combined.

Pour into 2 well-greased and floured loaf pans. Bake until toothpick inserted comes out almost, almost clean, about 1 hour. (It's better to slightly underbake than slightly overbake). Remove from pan and cool.
