South Western Fritatta

Ingredients

4oz Reduced fat smoked turkey sausage, chopped
1/2 Red Bell Pepper, chopped
1 Shallot, chopped
1 cup Spinach, roughly chopped
1 tsp Garlic Powder
2 TBSP Olive oil
7 Med eggs
1/4 cup nonfat milk
1/2 cheese (Monteray Jack)
S & P (to taste)
4 TBSP reduced fat Sour Cream
4 TBSP Salsa
Directions
Heat oven broiler to high.
In an oven safe skillet over med heat oil. Saute sausage until starting to brown. Add peppers and onions and continue to cook until peppers are softened. Add spinach and cook until wilted. Sprinkle with garlic powder, salt & pepper to taste. Spread evenly in the pan.
Scramble eggs & milk together. Pour eggs into center of pan on top of sausage/veggie mixture. DO NOT STIR. Cover pan and cook on HIGH until bottom is set, about 2 minutes. Sprinkle cheese on top.
Remove pan to oven. Broil until top the golden brown and center is set. Let cool 5 minutes before serving.
Cut into 4 equal pieces. Top each serving with 1 Tbsp each sour cream and salsa.
