My mom's sausage gravy and biscuits was one of my favorite breakfasts when I was growing up. Then I gave up meat--and my beloved breakfast. It wasn't until I discovered nutritional yeast and Field Roast links that I decided to give a vegetarian version of this recipe a try. It's a hit! Ingredients

2 T olive oil
1 small onion, chopped, about 1/2 cup
2 T whole wheat flour
2 Field Roast Smoked Apple Sage links (or other vegetarian "sausage"), chopped
1 T low-sodium soy sauce
1/2 c nutritional yeast
1 cup soymilk
1/2 cup water
1 t sriracha
black pepper to taste
Tips
Directions
Heat the oil in a skillet over a medium flame. Add the onions and cook for three minutes, until starting to soften. Add the sausage and cook for five minutes, until starting to brown. Add the flour and stir well. After two minutes, add the remaining ingredients, whisking well to combine.
Simmer until the gravy reaches your desired consistency. Serve over Stepf's Mini Rosemary-Oat Scones.
