Stepf's Not Sausage Gravy

Introduction

My mom's sausage gravy and biscuits was one of my favorite breakfasts when I was growing up. Then I gave up meat--and my beloved breakfast. It wasn't until I discovered nutritional yeast and Field Roast links that I decided to give a vegetarian version of this recipe a try. It's a hit! Number of Servings: 4

Ingredients

    2 T olive oil
    1 small onion, chopped, about 1/2 cup
    2 T whole wheat flour

    2 Field Roast Smoked Apple Sage links (or other vegetarian "sausage"), chopped

    1 T low-sodium soy sauce
    1/2 c nutritional yeast
    1 cup soymilk
    1/2 cup water
    1 t sriracha
    black pepper to taste

Directions

Heat the oil in a skillet over a medium flame. Add the onions and cook for three minutes, until starting to soften. Add the sausage and cook for five minutes, until starting to brown. Add the flour and stir well. After two minutes, add the remaining ingredients, whisking well to combine.

Simmer until the gravy reaches your desired consistency. Serve over Stepf's Mini Rosemary-Oat Scones.

  • Sriracha is a Chinese Chili Sauce. You can get it in an Asian market or in the Asian section of Safeway/Von's or Kroger stores. - 8/8/12

  • I am going to make this as I have everything but the sriracha. I have not idea what that is, but the nutritional yeast can be found in any health food store. It is great sprinkled on popcorn and has a somewhat cheesey flavor. - 5/19/12

  • I've never heard of sriracha or nutriional yeast - (good to kno there is a low sod. soy sauce). what sections in grocery store can I find the sriracha & nutritionalk yeast ? Thanks. - 3/27/12
