Awesome Veggie Egg White Omelet

This is a super flexible recipe. Take servings of your favorite veggies and fill up your omelet. Have room for extra calories in your diet? Throw on some reduced fat shredded cheese! Ingredients

    1 cup All Whites 100% Liquid Egg Whites
    1/2 cup fresh Portabello mushrooms chopped
    1 cup diced Zuchinni squash
    1/2 cup Rotel diced tomatoes and green chiles
    1 sprig Fresh parsley

Directions

Heat 5-10 squirts of I Can't Believe It's Not Butter Spray in a small skillet, Chop mushrooms, dice zuchinni, strip parsley leaves off stem and crush between fingers. Add zuchinni, mushrooms, and parsley to small skillet toss gently until zuchinni is soft. Spray a medium skillet with cooking spray gently pour in egg whites, heat over med low heat until firm. Gently turn omelet, add veggies and Rotel and fold. Allow Rotel to warm salt and pepper to taste. Serve with a slice of whole grain toast w/ calorie free butter spray and a piece of fruit or fruit juice. To Your Health!
