Sausage & Tomato Stackers

Ingredients

    1 lb bulk sausage, reduced fat
    1 lg tomato, sliced
    4 slices reduced fat cheese
    S & P (to taste)

Directions

Heat skillet over medium-high heat; cook patties until well browned and cooked through, about 4 minutes per side. Remove from heat, drain well.

Lay patties in a single layer in a baking dish, top with tomato; season with salt and pepper. Top each slice with 1 cheese slice; broil until cheese is melted, about 2 minutes. Serve hot.

These are great to patty up and cook on the weekend and toss them in the fridge for the week. Then in the morning you just heat the patty in the microwave, top with tomato and cheese and throw it under the broiler for 2 minutes.
