Green Chile Chili

Introduction

Number of Servings: 4

Ingredients

    1 T of canola oil; 12 oz of ground sirloin; 1 1/2 C of chopped onion; 1 T of chili powder; 1 teaspoon of hot paprika; 5 garlic cloves, minced; 1 (12 oz) bottle of dark beer; 1/2 C of salsa verde; 1 (4oz) can diced green chiles, undrained; 1(15oz) can no salt added tomatoes, undrained and crushed; 1(15 oz) can organic kidney bneans, rinsed & drained; 1/4 C (1 oz) shredded sharp cheddar cheese; 1 green onion, sliced

Directions

Makes 4 servings; 1 1/4 Cups = 1 serving.

1) Heat a large dutch oven over med-high heat. Add oil to pan; swirl to coat. Add beef; saute for 5 min or until no longer pink, stirring to crumble. Add chopped onion, chili powder & paprika; saute 4 min, stirring occasionally. Add garlic; saute for 1 min, stirring constantly.

2) Stir in beer; bring to a boil. Cook 15 mion or until lizuid almost evaporates. Add salsa & the next 3 ingredients (through beans); bring to a boil. Reduce heat, & simmer for 30 min, stirring occasionally.

Ladle 1 1/4 cups chili into each of 4 bowls, & top each serving with 1T of cheese. Sprinkle with green onion
