Introduction

Who wants to slave over a stove when they are sick? Quick Chicken (Quick-en) Noodle Soup is a great way to get homemade soup FAST! I used a rotisserie chicken for the meat, but you could just as easily boil some chicken thighs or breasts and shred. Who wants to slave over a stove when they are sick? Number of Servings: 4

Ingredients

    1 tbsp. butter
    1/2 c. celery, diced
    1/2 c. onion, diced
    1/2 c. carrots, diced
    1 clove garlic, minced
    4 c. chicken broth
    1 1/2 c. water
    1 1/2 c. shredded chicken meat
    1 1/2 c. whole wheat pasta, dry
    1 bay leaf
    1/2 tsp. sage
    1/2 tsp. rosemary
    1/2 tsp thyme
    Salt and pepper

Directions

Melt butter over medium-low heat in a large saucepan. Add celery, onions carrots and garlic and saute until just softened, about 5 minutes. Add chicken broth and water. Bring to a boil. Add remaining ingredients and simmer until pasta is cooked and all veggies are soft, about 15 minutes. Remove bay leaf before serving.

Makes 4 2-cup servings.
