Celery Soup

Introduction

A thick, creamy, smooth soup with no dairy and a bright taste. A thick, creamy, smooth soup with no dairy and a bright taste.
Number of Servings: 4

Ingredients

    2 c. chopped celery
    1 c. chopped onion
    1.5 tsp. minced garlic
    1 medium potato, cubed
    1/2 c. white wine
    1 c. low sodium chicken broth
    1/2 tsp. salt
    1 tbsp. olive or canola oil

Directions

Put oil into medium sized pot and heat until warm. Add celery, onion, garlic, and salt all at once. Stir frequently until softened and the onion is translucent. Deglaze the pan with the white wine. Simmer until the wine is reduced by half. Add the potatoes and stock, cover, and cook until the vegetables are soft when pierced with a knife, but not mushy. Use an immersion blender to puree the soup or do it in a blender, being careful of the hot liquid. Reheat and serve immediately. Garnish with a few chopped chives or garnish of your choice.

Makes 4 generous servings.
