Mom's Beef Stew Bourbonnais

Introduction

Number of Servings: 4

Ingredients

    1 lb beef check cut into 1 inch cubes, or buy the stew meat already cut up.
    1 Tbsp olive or cannola oil
    1 clove garlic
    1 medium onion, chopped
    1/2 tsp salt
    1/4 tsp black pepper
    1 can tomato soup, undiluted
    3/4 cup dry red wine
    1/4 cup water
    1/4 tsp each basil and thyme
    1/2 cup ketchup

Directions

Cut beef into 1 inch cubes. Brown stew meat in oil, add garlic and onions until soft. Add 1/2 tsp of salt and 1/4 tsp of pepper. Stir in Tomato Soup, undiluted, 3/4 cup dry red wine, 1/4 cup water. Add 1/4 tsp each of basil and thyme 1/2 cup Ketchup. Simmer 2-2 1/2 hours. Serve over egg noodles or rice.
