Meatball Soup

Ingredients

Meatballs:
1 egg
1 pound ground chuck
1/2 cup soft white bread crumbs
2 tablespoons chopped parsley
2 tablespoons grated Parmesan cheese
1/2 clove garlic, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
3 cans (10.5 oz) Cambell's beef broth, undiluted
1 package (8oz) Farfalle noodles
Grated Parmesan Cheese
Chopped Parsley
Directions
Makes 6-8 servings
Make meatballs: In a medium bowl, beat egg slightly with a fork, add rest of meatball ingredients, mix well. Form into 36 balls (one rounded teaspoon per ball).
In a large kettle or 6 quart dutch oven, bring beef broth plus water to make 9 cups total liquid to boiling (will need to add about 5 1/4 cups water)
Add meatballs, simmer 5 minutes. Remove meatballs with a slotted spoon.
Return liquid to a boil, add noodles/ Cook uncovered and stiffing occasionally about 10 minutes.
Return meatballs to soup. Simmer 5 minutes or until heated through and noodles are tender.
Sprinkle with Parmesan cheese and parsley to serve.
