Ingredients

1/4 green pepper, chopped
1/4 onion, chopped
2 cloves of garlic, minced
1 bag 15-bean soup
2 Tbsp Extra Virgin Olive Oil
1 Tbsp salt
Juice from 1 lemon
Directions
1. Rinse beans from bag, then place in a put with 3-quarts of water. Bring beans to a boil. Reduce heat, and boil for approx 60-70 minutes, stirring occasionally to prevent sticking.
2. Saute green peppers, onions and garlic in olive oil. Add to bean soup at end of 60 min.
3. Simmer for 30-45 minutes.
