Bacon Pasta Sauce

Introduction

I've been trying to eliminate meat from a couple of dinners a week. My husband is adamantly resistant. This recipe is a compromise - it only has a little meat....but it's bacon!!
Serve 1/4 of this recipe over 1/2 cup pasta. Delicious!

Number of Servings: 4

Ingredients

    Bacon, 4 medium slices
    Onions, raw, 1 medium, coursely chopped
    1 Bell Pepper, chopped
    1 cup sliced mushrooms
    1 can Stewed Tomatoes
    Oregano, basil & red pepper to taste.

Directions

Fry bacon in a large frying pan. Remove bacon from pan and place on paper towel to cool. Leave bacon fat in pan.

Fry chopped onions in bacon grease until nearly browned. Add bell pepper and mushrooms. Heat until soft. Add stewed tomatoes and spices. Heat through.

Serve on top of pasta
