Finnish Pancakes

Ingredients

    2 large eggs
    1/2 cup milk
    1/2 cup flour
    1/8 tsp salt
    1 Tablespoon sugar
    1 tablespoon margarin


Directions

set oven to 400 degrees

Put 1 tablespoon margarine in a pie plate. melt in the oven.

While melting margarine, beat eggs and milk together, add salt, sugar and flour.

remove pan with melted margarine, pour mix into pan. Return to the oven and bake for 30 minutes or until puffs up and edges are golden brown.

If desired, you can add sliced apples with cinnamon and sugar. One apple will do the trick!

Enjoy as is or with a little bit of syrup!

Easy, Yummy, and filling. I made these as the recipe stated, it did look funny with the edges flowing up and the poofing center. My family was hesitant, but once they tasted it....GREAT!!! This is now my pancake recipe for good. I added 1/2 tsp brown sugar and 1/2 tsp maple syrup....mmmmmm good.

Incredible!
I made these with oat bran instead of flour to give them a bit more nutrition and compliant with the South Beach Diet, phase 2. They worked very well.

This was fantastic! I used agave nectar for sweetener, 1/4 cup whole wheat flour and 1/4 flax seed. My 6 year old son loved it,a lso.

Great recipe! We have been making Swedish Pancakes for years as a 'special occasion' treat but this is much easier and very tasty and lite!

Very very good, I use this all the time when I am in a hurry for breakfast! You can roll it with fruit in the middle (or jelly) and eat it on the run!

OMG! This was soooo good! I diced up an apple and sprinkled about 1/2 tbsp cinnamon sugar over the top. But, could be good with a little lemon juice and powdered sugar - like a 'dutch baby miniature' from one of my favorite family restaurants!

Wonderful! Reminded me a bit of a big cream puff. Made it exactly to recipe. Spreaded a bit of pumpkin butter mixed with fat free plain yogurt on top and Voila! Definately will make again.

We really enjoyed this. I used an egg beater instead of one of the eggs and it still turned out tasting great. I cooked some apples in brown sugar and cinnamon ... this will become a regular weekend breakfast (and maybe even an occasional dinner)

I made a brownsugar spice reduction, then cooked some canned peaches in it, just until warm. Poured this over the pancakes then topped it with some sweetened cinnamon fat free yogurt. My roommate and I LOVED IT! She said it tasted like a deconstructed peach cream pie. These are GREAT!
