Vegetable Lasagna

Ingredients

    4 cups chopped collard greens
    3 cups chopped zucchini
    3 cups fat-free cottage cheese
    2 cups sliced mushroom
    1 large can sliced,drained black olives
    1 can diced tomatoes
    2 cups grated carrots
    1 teaspoon Italian seasoning
    1 teaspoon basil
    2 tablespoons parsley
    1 tablespoon garlic
    1 cup chopped onion
    3 egg whites
    0.25 cup parmesan cheese
    3.5 cups tomato sauce
    4.5 cups shredded lo-fat mozzarella cheese
    9 cooked whole wheat lasagna noodles

Directions

Preheat oven 350 degrees. In large bowl, combine collard greens,zucchini,cottage cheese, olives, mushrooms, tomatoes, carrots, onion, egg whites,italian seasoning, basil, parsley, garlic, parmesan cheese, mix well. Add tomato sauce and mix well. In 13 x 9 deep dish pan alternate layers of sauce, noodles and cheese.,Bake15-20 minutes or till cheese is melted. Let stand 15 minutes before cutting. Serves 8
