Tomatoe Basil Soup with coconut milk

Ingredients

    4 large tomaotes peeled
    4 cups tomatoe juice low sodium
    1/4 c. light butter
    1 c. coconut milk

Directions

peel tomatoes and put them in stew pot with tomatoe juice and let cook for 30 minutes, add a bit of sea salt during this cooking process. End of 30 minutes remove tomatoes from pot and add basil into a food processor then return to pot and stir in the coconut milk and butter, DO NOT BOIL but let soup warm up and butter melt. Serve immediately.
Makes 4 - 1.5 c. servings
